Allergic Girl Recipe: Nut-Free Pesto

Basil pesto is very often made with pine nuts which is classified as a tree nut by the FDA. But you know what, it’s still great without nuts. And it’s really easy. Especially I since I got this Cuisinart mini-chopper.  I use the same recipe to make a parsley pesto.
Below is my recipe for both.

Nut-Free Pesto

Handful fresh basil (or parsley), washed and dried
1 ounce parmesan cheese
1 garlic clove
½ t salt
½ cup evoo

Whiz the garlic and parm together until chopped into fine bits. Add the basil or parsley, salt and evoo and whiz until all incorporated. Taste, adjust for salt. And you’re done.
Spread on everything! Some examples below!
