Happy Chanukah, 2011

Tonight is the first night of Chanukah, the Jewish Festival of Lights. I'm lighting candles and placing the Menorah in my window, as is traditional.

Here’s some more info about this holiday from About.com.

And here’s a lovely Latke recipe (untried by me, yet) from the New York Times: Apple-Potato Latkes with Cinnamon Sour Cream. (I’m planning on substituting wheat flour with an all-purpose gluten-free allergen-free flour blend like King Arthur's.) Here's one without any wheat flour, also from the New York Times: Red Flannel Potato Latkes.

Enjoy!

Love latkes. With egg allergies we've just left out the egg or used egg replacer for latkes, and it works just fine - with regular or sweet potato! Happy Chanukah!
